SIMPLE FISH FRY RECEIPE

INGREDIENTS

5 to 6 pieces - fish
2 tsp - Red Chilli powder
1/2 tsp - coriander powder (optional)
1/2 tsp - Turmeric powder
1 tsp - Lime juice
Salt to taste
Oil to toast/deep fry

HOW TO MAKE SIMPLE FISH FRY:

Clean fish and wash it twice to thrice. Set aside.
In a wide mixing bowl, add red chilli, turmeric powder, coriander powder, lime juice and required salt. Sprinkle a little water to make a paste-like consistency.
Then add the fish and mix well.
Coat the masala on all sides of the fish and marinate for at least 30 mins.
Heat oil in a pan or dosa tawa and fry the fish until the fish turns dark brown in colour

FISH GHEE RECEIPE

Fish ghee rice recipe – A simple rice & fish recipe for beginners using basic ingredients, can be made under 30 mins. Ghee rice is a simple rice recipe from the South Indian Cuisine. One can find a few different ways of making this, probably each south Indian state has their own version. I had shared earlier 2 recipes of ghee rice here. This recipe is a rough adaptation of one of the recipes shared there. This fish ghee rice tastes delicious and can be served with a vegetable salad or just onion, cucumber and carrot slices.


How to make fish ghee rice

1. Wash, soak and cook rice in whatever way you like. You can use any kind of rice. I have used basmathi since it adds a little more flavor to the dish. Make sure the rice is cooked to al dente (not mushy) and is cooled down.
2. While the rice cooks, go ahead making the fish. Wash fish and drain completely. Add red chilli powder, turmeric, salt, ginger garlic paste, lemon juice and garam masala. Set aside for about 10 minutes. Meanwhile slice onion, green chili and set aside.
3. Add ghee to a hot pan as needed. Ghee lends a very good flavor. Add garlic and saute until nice aroma comes out. Add fish, curry leaves and begin to fry on a medium flame. Flip the fish after 3 to 4 mins and add more red chili powder if needed.
4. When the fish is cooked completely. Set this aside to a plate.
5. To the same pan, add sliced onions, slit green chili and begin to saute. If needed add more oil or ghee. Do not skip green chili other wise the rice will taste bland.
6. When the onions turns golden, add curry leaves, cashews and raisins. These are optional but I suggest adding at least few chopped cashews else the rice will be plain.
7. Saute everything well until the nuts turn golden

8. Add cooled rice, pepper and salt. Switch off the stove.
9. Mix everything well.
Serve hot rice with roasted fish & onion cucumber carrot slices.

Ingredients (240 ml cup used)

for marination
250 grams fish pieces
¾ tsp ginger garlic paste
½ tsp red chili powder
½ tsp garam masala
little turmeric powder
salt as needed
lemon juice as needed

other ingredients

2 sprigs curry leaves
1 tsp garlic chopped
1 to 2 tbsp ghee (or oil)
2 to 3 green chilies slit
1 cup rice (basmathi or jasmine preferred)
1 onion thinly sliced
cashews and raisins as desired.
⅛ tsp pepper powder
salt as needed

How to make the recipe

Wash, soak and cook rice al dente. It can be cooked in a pot or cooker. Once done cool it completely.
Marinate fish and set aside for 10 mins.
Fry garlic in hot ghee and then add curry leaves and fish. Fry for 3 mins and then flip . Add more spice powders if you like. Fry until it is done on both the sides. Transfer this to a plate.
Add more ghee or oil to the pan.
Fry onions, green chili until onions turn golden.
Then add curry leaves, nuts and raisins. Saute everything well until the nuts are roasted well.
Add cooled rice, salt and pepper. Switch off and mix well.
Serve rice and fish with fresh salad or sliced onions and carrots.

PRAWN MASALA CURRY

prawn curry or prawn masala recipe – For all the seafood lovers, here is an easy and quick prawn curry recipe that best pairs with any fragrant rice and phulka, naan or chapathi

To make prawn curry or prawn masala, we just need the basic ingredients that would be available in most Asian kitchens. To make the gravy flavorful, we need a mild garam masala powder, curry leaves and coconut. I have used tiger prawns, you can use any variety.

An Indian prawn masala curry

Ingredients (240 ml cup used)                                    

1 large onion
1 large tomato
1 ½ tbsp. fresh or frozen coconut or cashewnuts
2 pinches of turmeric
½ to ¾ tsp. red chili powder
½ tsp. coriander powder
½ tsp. garam masala
1 tsp. ginger garlic paste or grated
250 grams prawns
1 ¼ cup water (adjust, you may need more or less)
1 sprig curry leaves
1 garlic clove
¼ tsp. cumin
Chopped coriander leaves for garnish
1 ½ tbsp. oil

How to make the recipe

Slice onions, chop tomatoes, grate or make a paste of ginger garlic. Set aside all these
Devein and wash the prawns. set aside
Add ¾ tbsp. oil to a pan and fry onions till transparent, add ginger garlic paste and fry till the raw smell disappears.
Add tomatoes, add salt and turmeric and fry till the tomatoes turn mushy. Add red chili powder, garam masala, coriander powder and then the coconut. Fry everything well for about 3 to 5 minutes without burning. Cool this and blend with ¾ water to smooth. To speed up the process you can use ice cold water to blend the hot mix.
Add another ¾ tbsp. oil to the pan and heat up, add cumin and garlic, when the garlic is lightly roasted add curry leaves and saute till they turn crisp.
Add the prawns and fry till the color changes, just for about 2 minutes, for the raw smell to disappear.
Pour the ground mixture and add water as needed. Cook till the prawns are cooked, they swirl up when cooked. Do not overcook they turn hard.
Garnish with coriander leaves.
Serve with any fragrant rice, biryani or roti, naan or chapathi.

After i made the spicy prawns pakora, i was left with few prawns which i had to use up, so made this.

 how to make prawn curry (prawn masala) with step by step 

1. Fry onions in hot oil till they turn pink, fry ginger garlic paste till the raw smell goes away.

2. Add chopped tomatoes, sprinkle salt and turmeric. Fry till the mixture turns mushy.

3. Add garam masala, coriander powder, red chili powder and grated coconut. I used frozen coconut. you can also replace coconut with cashews nuts.

4. Fry on a medium heat till the mixture is nicely roasted, for about 3 to 5 minutes. Take care not to burn. To give a restaurant gravy taste and texture, we need to cool this and blend. You can also continue to cook the curry without blending. Just skip the next 2 steps and follow from step 7.

5. When it cools down blend with ¾ cup water to smooth. I add ice cold water to the blender and then the hot mix and blend to cut down the cooling time. Set this aside.

6. Heat the same pan, add oil, cumin and garlic, wait till the garlic is lightly roasted, add curry leaves, fry till crispy.

7. Time to add the prawns and fry till they turn pink, for about 2 minutes, for the raw smell to go away.I set aside the garlic to prevent burning while i take the pictures.

8. Add the onion tomato mixture and more water as needed. Cook until the prawns are cooked, they swirl up when done fully. Overcooking will make them hard. Switch off the stove. Sprinkle chopped coriander leaves.

Serve with fragrant rice or roti, naan or chapathi. Jeera rice was a good choice to enjoy this prawn curry, will share it shortly. We felt raita didn’t go well with this.
